Here are some other smaller places where a lot of old world buildings remain in your areas of travel: Bamberg (NE of Würzburg) Schwäbisch Hall (W of Dinkelsbühl) Nördlingen (on the Romantic Road) Eichstätt (S of Nuremberg) ... At first glance I thought those two places looked pretty alright! For the places you recommended, would you recommend staying in any one of them? Or should they be towns on the way to some other major towns, ie Rothenburg or the towns you mentioned ...
